Jiffy Cornbread Casserole with Ground Beef

Jiffy Cornbread casserole with ground beef is a great meal to fix for the entire family.

The cheeseburger casserole recipe calls for a few simple ingredients, is budget-friendly, and feeds quite a few people.

Jiffy Cornbread Casserole with Ground Beef

One of the frustrations of having two teenage boys is feeding them and keeping them full.

It’s not an easy task and Jiffy Corn Muffin Mix has come to the rescue more often than once.

The muffin mix is filling and mixes up well with veggies, ground beef, onions, and cheese–plus, the casserole recipe is super easy to make.

Make the Ground Beef Ahead of Time

I cooked the ground beef the day before while I had a little extra time and when I was ready to make the recipe, I was able to pull it out of the fridge and have the meal in the oven and cooking in less than 15-minutes.

It takes about 30 minutes to cook the meal (if you start out with cooked ground beef), and it’s ready to go.

The best thing about this casserole recipe is that you’re getting almost all of the food groups into one dish.

What do I need for this beef casserole recipe?

  • Cooked ground beef
  • Onion (diced)
  • Can of cream of chicken soup
  • Frozen mixed vegetables
  • Milk
  • Eggs
  • Jiffy Corn Muffin Mix
  • Shredded cheddar cheese
  • Salt and pepper to taste

How Do I Make the Cheeseburger Casserole?

  1. Firstly, mix the Jiffy Cornbread mix, eggs, and 2/3 cup of milk and spread it into the bottom of a greased 9″ x 13″ casserole dish.
  2. Secondly, add the cooked ground beef, veggies, onions, cream of chicken soup, and half of the shredded cheese to a large bowl and mix it well.
  3. Add 1/4 cup of milk to the ground beef mixture and mix.
  4. Thirdly, pour over the cornbread, add the salt and pepper, and top with the remaining shredded cheese.
  5. And finally, bake in a preheated oven for 30 minutes and the cheese is melted and toasty on the top.
  6. Serve and enjoy!

Step-By-Step Instructions

Jiffy Corn Muffin Mix

Firstly, start by adding the Jiffy Corn Muffin Mix to a medium-sized bowl.

Pour the milk and eggs into the muffin mix and stir everything together.

Grease the casserole dish and spread the Jiffy Muffin Mix on the bottom of the pan.

You will need a 9″ x 13″ pan for this recipe, otherwise, you’ll have food pouring over the sides.

Grease the casserole dish liberally and I cannot stress this enough, or you’ll be spending a lot of time cleaning the dish after dinner.

I didn’t really grease mine enough this time and it stuck to the pan.

Should I Bake the Cornbread First?

Some people like to bake the Jiffy Corn Muffin Mix before adding the rest of the ingredients because it will give the cornbread more of a crunch.

But, I like to cook the cornbread and the beef mixture altogether; however, either way will work.

If you do decide to cook the cornbread before adding the casserole to the top, don’t cook it as long as the cornbread directions state because it will come out super dry.

Try cutting the cornbread cooking time in half to see how it comes out.

If you decide not to cook the cornbread first the dish will still taste amazing. I actually prefer that it cooks all together.

I’ve also had a lot of readers say that they like to add the cornbread on top of the cheeseburger ingredients, and that works, too.

Ground Beef Topping Mixture

Secondly, add the cooked ground beef to a large mixing bowl.

I brown the meat in a skillet, drain the grease, and then add it to a heat-safe mixing bowl.

The Fresh Market offers ground beef at a discount one day a week here in town, so I head down to the store and purchase a handful of ground beef and chicken and save a lot of money.

If you can find a place that offers it for a good price, you can freeze it and really save some money.

I will buy several pounds on sale day and freeze the meat and then cook it throughout the next couple of weeks.

Next, add the frozen vegetables and diced onions to the bowl.

I only had peas in my freezer, so that is what I used this time.

You can use mixed vegetables or any type of small diced veggies that you like and everyone will get their protein and veggies!

The kids like the mixed veggies with corn, carrots, peas, and butter beans. Adding that to the dish is always a hit, and I’m getting healthy food in them.

Other Vegetable Options:

  • Green beans
  • Diced green bell pepper
  • Green chilies for a Tex-Mex flavor
  • Green onions

Add the cream of chicken soup, half of the shredded cheese, and the remainder of the milk to the bowl.

Now’s a great time to also sprinkle some salt and pepper over the top. Give everything a good stir.

Thirdly, you’re going to spread the food over the Jiffy Corn Muffin Mix.

Sprinkle the rest of the shredded cheddar cheese on top of the casserole.

And finally, bake the Jiffy Cornbread casserole recipe for 30-minutes or until the cheese is nice toasty and golden brown on top.

Doesn’t it look delicious?! Plenty of melty cheese, hearty meat, and veggies.

This is also a dish that you can make ahead of time and stick in the freezer for a later date and pull it out when you’re ready to cook it.

It’s great if you’re hauling kids all over the place and need to have something ready for dinner, or guests are coming for a visit and you need to prepare food ahead of time.

What is in a casserole?

A casserole dish usually contains several ingredients including the main ingredient, such as the ground beef, and side items like the vegetables and is cooked in one dish.

I love casserole dishes because you can pretty much throw everything into the dish and cook it.

Can I make this dish ahead of time?

Yes, although I would make up the beef mixture ahead of time and prepare the cornbread when you are ready to bake the dish.

Then add the cornbread to the bottom of the dish, pour the beef mixture over it, top with cheese and bake.

My cornbread came out dry, what do I do?

By its nature, cornbread is crumbly, so you can add two tablespoons of sour cream to the cornbread mixture and that will help keep it from being so dry.

You can store the leftovers in an airtight container in the refrigerator.

Yes, you can freeze the cheeseburger casserole for up to two months. But, you will need to cover the dish with heavy duty aluminum foil. Do not bake the dish before freezing.

Ingredients
  

  • 1 pound cooked ground beef
  • 1/4 cup onion diced
  • 10.5 ounce can cream of chicken soup
  • 1 cup mixed vegetables
  • 1/4 cup milk + 2/3 cup milk
  • 2 eggs
  • 2 – 8.5 ounce boxes Jiffy Corn Muffin Mix
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 350-degrees. Liberally grease a 9" x 13" casserole dish with butter or non stick cooking spray.
  • Brown ground beef, drain the grease, and add to a large heat-safe mixing bowl.
  • Add the two boxes of Jiffy Corn Muffin Mix, eggs, and 2/3 cup of milk to another large bowl. Mix everything together and spread into the casserole dish.
  • Add the diced onion, vegetables, cream of chicken soup, salt and pepper, and half of the shredded cheese to the bowl with the cooked ground beef. Mix everything together well.
  • Pour the 1/4 cup milk into the bowl and mix.
  • Spread over the Jiffy Corn Muffin Mix and top with the remaining cheddar cheese.
  • Bake for 30-minutes.

  7. I do not like cornbread. Is there something else I can use instead of the cornbread mix? I am referring to the “Jiffy Cornbread Casserole with Ground Beef”.

      You could use biscuits instead of cornbread. You could line the bottom with a few biscuits and then add a few to the top. You could also use tater tots on top. If you decide to use the biscuits it might need to cook for a different amount of time, so I would keep an eye on it.

        Hi Julie: I tried it with the Bisquick. Had to tweek it a bit. It was ok but not anything special. Next time I will try it with mashed potatoes on the bottom. That should be good.     If you make ahead and freeze for future baking, do you go ahead and freeze with the cheese on top? Would you adjust cooking times or just cover with foil and bake and remove the foil and brown the cheese? Sounds great so Iโ€™m going to try fresh first.

      Hi Brandy, I would put the cheese on top when I was ready to bake it. If you freeze it, I would add at least half an hour to the cooking time with the tin foil on top, unless you let it thaw out before cooking. I hope you love it!

  15. I would make one change in that I would put the cornbread mix on top. You still get the cornbread crunch and you cook it all together. This is how I do other recipes that includes cornbread. I also make mine from scratch not much harder to do.

    I am making this tonite but going to use mushroom soup and add some garlic powder……..no extra salt because the soup is salty enough. For vegetables I am using 1/2 can baby peas, and 1/2 can corn. Hope it turns out ok.

    It does look good in the picture, but it’s really nothing special. My husband hated it. His first statement, “TOO MUCH BREAD!” I didn’t hate it, but there was too much bread. I doubt that I would make it again, but if I did, I would use one box of cornbread mix. Personally I would not use Jiffy because it’s sweet, and I don’t think sweet cornbread is a good fit for this recipe. I would also add seasonings (more salt and pepper, garlic, jalapeรฑo, etc.). It was a little bland. So sorry, but those are my honest thoughts. Mama in Birmingham

  20. I love this recipe! Recipes are all about ideas, and this is a great idea. people should remember if it’s not exactly how they want it to turn out, they can try to make it their own. My toddler LOVES cornbread and loves flour in general. It’s hard to get him to eat meat and veggies. I stumbled across this recipe and thought “tada”. I used a cornbread recipe that I normally use and combined it with a ground beef seasonings I normally make. I followed your instructions and this turned out delicious! Thank you!

    This is just horrible. It doesnโ€™t tell you how many jiffyโ€™s to use nor how much cheese nor what temp to bake at. I never heard of that happening!

    Itโ€™s just me and hubby so I changed it up a bit to fit us.

    What I liked:
    1. Easy
    2. Flexible enough that I can substitute some pantry items i.e. frozen corn for mixed veggies, green peppers instead of onion.

    What I would change:
    1. 1 box cornbread. 2 boxes overwhelmed the meat mixture. Maybe would put the cornbread on the top instead so the meat mixture didnโ€™t soak into the cornbread.
    2. I always taste test and found the meat mix bland. I added 1 full envelope onion soup mix and it was too salty. Iโ€™d add 1/2 envelope next time.
    3. Not quite a pound of ground beat. (.80-.85 lb) my hubby and I donโ€™t need a full lb.

    Reminded me of tater tot casserole.

    Will I make it again?
    Hummm, maybe, maybe not. Hubby didnโ€™t like it. If it was only me, I would make it again.

  28. I made this last night, and I’m sorry but neither my husband nor I liked it. I make casseroles all the time, so it’s not that we are picky. The combination of flavors was confused. We couldn’t tell if it was too salty, or too sweet, but I’ll never make it again. Scraped the top off and I will try to eat that for lunch, but threw out the cornbread base.

    Hi! I think the recipe is great! I did sautรฉ my onions with the ground beef & added garlic to cook with the meat. I also buy ground beef in bulk so I split half of the cooked beef and froze it for later! I also did not see the measurements so I only used one box jiffy cornbread but it is delicious!!! Definitely will do this againโ€ฆ.super easy and great to use what you have on hand. I had a bag of frozen mixed vegetables and I think itโ€™s a perfect one pot meal! Thank you for sharing!

      If you’re having a hard time getting it to cool all the way, I would stick it in the oven, just with the cornbread, for a few minutes to let it get started and then add the rest of the ingredients and put it back in the oven. Hope that helps!

Because I like something green with my meal I sliced brussell spouts thin and layered the bottom with them and added red and yellow bell pepper along with baby spinach to the ground beef just poured the prepared cornbread mixture (added sweet corn) over the top along with cheese. …..was delicious and hopefully nutritious….

  41. It’s a Cheese burger style casserole. With jiffy corn bread on the bottom. Its Really good. As suggested in comments I added cooked bacon cut in approximately 1/2″ pieces to the ground beef , cream of chicken soup mixture. Also as suggested in comments I only used 1 box jiffy mix. I think 2 would have been good if your making this for more than 2 people.

  42. We make this in rotation at our house but definitely cook onions with meat and we only use one box of Jiffy. I also have used different veggies and we found green beans work best for us! Love this quick and easy meal on a busy workday

    Really easy. Tried cornbread on top and it turned out great. Rubbed some butter on top when the cornbread when it was done, delicious!! Husband and I say it’s a keeper!
