Cheesy Dorito Casserole with Ground Beef

Ingredients

  • 1 pound ground beef 
  • 1/2 onion, diced
  • 1 tablespoon of minced garlic
  • 1 ounce packet of taco seasoning
  • 3/4 cup of water
  • 10-ounce can of Rotel with diced tomatoes and green chilies
  • 2 cups of salsa (your favorite)
  • 9.7-ounce bag of Nacho Cheese Doritos
  • 3 cups of shredded sharp cheddar cheese.

Step-By-Step Instructions

Grease a 9×13-inch baking dish and preheat the oven to 350 degrees.

Cook the ground beef, onions, and garlic in a skillet on medium heat until brown. Drain the grease. Add the taco seasoning and the water and mix. Next, add the Ro-Tel and salsa and mix well. Break up the Doritos and spread one-third along the bottom of the greased pan.

Spread about one cup of the cheese over the Doritos. Next, spread half of the ground beef mixture over the Doritos and cheese. Add another third of the Doritos and cheese over the meat mixture to create another layer. Spread the rest of the meat and cheese over the Doritos and bake for about 20 minutes.

Sprinkle the remainder of the Doritos and cheese over the top and bake again for about 5-10 minutes or until the cheese is melted. (Be careful, as the Doritos can burn easily). 

Optional Ingredients

Top with a dollop of sour cream, a few sprigs of fresh cilantro, a few slices of cherry tomatoes, and a few small jalapeños. You can also use your favorite taco toppings like bell peppers, black olives, and green chiles. 

Variations and Substitutions

Feel free to choose lean ground beef, ground turkey, ground chicken, or ground pork instead for this hearty casserole. To round out the meal, I like to serve it with black beans, but you could do pinto beans or refried beans instead. This Dorito casserole would also be a hit with Cool Ranch Doritos too!
