How To Make The Beans

Start by adding the undrained cans of pinto beans to a slow cooker.

Next, add the diced onion, BBQ sauce, molasses, and black pepper and stir to combine. Place the lid on top and cook on the low-temperature setting for eight hours.

Great taste and VERY easy! It makes a LOT, too – great for potlucks or church suppers – and the flavors are even better if you refrigerate this overnight. And with moist Jiffy cornbread – heaven. This will fill you up on a relatively small amount so it’s a budget-friendly side, too. 🙂
A couple of things I modified: 1. Instead of dicing a fresh onion, I used a 12-oz bag of frozen chopped onion (worked just as well); 2. For the last half hour of cooking, I removed the slow-cooker cover, added 2 tablespoons worth of cornstarch slurry and mixed it in well, and changed the cooking temp to HIGH. That made it to my desired thickness.
