Jiffy Cornbread Casserole with Ground Beef

Jiffy Cheeseburger Casserole is a great meal to fix for the entire family. The cheeseburger casserole recipe is budget-friendly and feeds quite a few people. I fed two teenage boys, my husband, and myself and we had leftovers. It's a great meal.

Ingredients

  • 1 pound cooked ground beef
  • 1/4 cup onion diced
  • 10.5 ounce can cream of chicken soup
  • 1 cup mixed vegetables
  • 1/4 cup milk + 2/3 cup milk
  • 2 eggs
  • 2 - 8.5 ounce boxes Jiffy Corn Muffin Mix
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  • Preheat oven to 350-degrees. Liberally grease a 9" x 13" casserole dish with butter or non stick cooking spray.
  • Brown ground beef, drain the grease, and add to a large heat-safe mixing bowl.
  • Add the two boxes of Jiffy Corn Muffin Mix, eggs, and 2/3 cup of milk to another large bowl. Mix everything together and spread into the casserole dish.
  • Add the diced onion, vegetables, cream of chicken soup, salt and pepper, and half of the shredded cheese to the bowl with the cooked ground beef. Mix everything together well.
  • Pour the 1/4 cup milk into the bowl and mix.
  • Spread over the Jiffy Corn Muffin Mix and top with the remaining cheddar cheese.
  • Bake for 30-minutes.
