Jiffy Cornbread Casserole with Ground Beef
Jiffy Cheeseburger Casserole is a great meal to fix for the entire family. The cheeseburger casserole recipe is budget-friendly and feeds quite a few people. I fed two teenage boys, my husband, and myself and we had leftovers. It's a great meal.

- 1 pound cooked ground beef
- 1/4 cup onion diced
- 10.5 ounce can cream of chicken soup
- 1 cup mixed vegetables
- 1/4 cup milk + 2/3 cup milk
- 2 eggs
- 2 - 8.5 ounce boxes Jiffy Corn Muffin Mix
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
Preheat oven to 350-degrees. Liberally grease a 9" x 13" casserole dish with butter or non stick cooking spray.
Brown ground beef, drain the grease, and add to a large heat-safe mixing bowl.
Add the two boxes of Jiffy Corn Muffin Mix, eggs, and 2/3 cup of milk to another large bowl. Mix everything together and spread into the casserole dish.
Add the diced onion, vegetables, cream of chicken soup, salt and pepper, and half of the shredded cheese to the bowl with the cooked ground beef. Mix everything together well.
Pour the 1/4 cup milk into the bowl and mix.
Spread over the Jiffy Corn Muffin Mix and top with the remaining cheddar cheese.
Bake for 30-minutes.
