Gather your ingredients.

A bowl of ingredients for jiffy cornbread.

Start by adding two boxes of Jiffy cornbread mix to a large mixing bowl. Pour the vegetable oil into the bowl with the boxes of Jiffy Corn Muffin Mix. Next, add the milk, eggs, and sour cream to the bowl.

You can use either regular milk or buttermilk for the recipe, depending on what you like better. For this recipe, I used two percent milk.

If you’re not a big sour cream fan, you can switch it out with plain Greek yogurt.

Add the flour to the bowl and mix it with the other ingredients.

Pour the sugar into the bowl. The recipe calls for three tablespoons of sugar, which is only a small bit of sugar. You can add more or less depending on your taste. It also calls for honey, so if you want to leave the sugar out, you can do that as well.

Pour the honey into the bowl with the other ingredients and mix until combined.

If you like maple syrup, you can use that instead of honey. We love pure maple syrup around here, which also tastes great. For best results, don’t over-mix because it can cause it to be more crumbly when baked.

Cornbread in a cast iron skillet.

Add the batter to a greased 9-inch by 13-inch baking dish or a cast iron skillet and bake at 375 degrees for 20-25 minutes or until golden brown.

Tips:

  • If you don’t like sour cream, you can switch it out and use plain Greek yogurt instead.
  • For variety, use maple syrup in place of honey.
  • The recipe can also be made in a large, greased cast iron skillet.
  • We love to add some butter on top while the cornbread is still warm. There’s nothing better than melted butter on top of warm cornbread.
  • We also like to drizzle a little bit of honey on top, as well.
  • Don’t over mix, or it can cause the cornbread to come out crumbly.

I absolutely love this cornbread recipe and planned to eat it with chili today but discovered I only had one box of Jiffy corn muffin mix. Can this recipe be made with only one box if I half the recipe all the way or should I add another ingredient to make up for the one box that’s missing? Thanks so much for this wonderful recipe and I look forward to hearing from you.

    1. Julie Pollitt says:

I haven’t made it with half the recipe, but I do think you can. I would use a small casserole dish, if possible. I am so glad you like it!

      @Julie Pollitt,
Hi! Made this recipe halved (sort of) and it was great! I used a 6 1/2 in dark cake pan, greased with ol` school crisco shortening and dusted with flour (it’s how I grease all my pans, muffin tins, cast iron, etc). 1 box of Jiffy Corn Muffin Mix, 1/3 cup milk, 1 egg, 1/2 cup sour cream, 1 1/4 tablespoon sugar, 1 1/2 tablespoon honey, 1/4 cup vegetable oil or melted butter. 3 tablespoons flour. Baked it at 400 for 15 minutes or until a toothpick comes out clean. Thanks for your recipe!!!

True southerners don’t put sugar or honey in there cornbread after you cook it you can add honey

    1. Julie Pollitt says:

Well…there’s a few true southerners that do. Did you make some? If so, how’d you like it?

    2. @John Woodson, I’ll have to disagree with this. I’m in the deep south (Carolinas) and all my family does it.

  5. Dan White says:

Jiffy is not a Canadian company. Chelsea milling is still owned by the original founding family. The Holmes family still makes there products at the original site in Chelsea Michigan.

    1. Julie Pollitt says:

Thank you for pointing that out!

  9. I loved it. however, I used Splenda. Will that affect the consistency of cornbread? or density of cornbread?
