- Two 8.5 ounce boxes Jiffy Corn Muffin Mix
- 2 eggs
- 3/4 cup sour cream
- 2/3 cup milk
- 3 Tablespoons honey
- 3 Tablespoons sugar
- 1/2 cup vegetable oil
- 1/3 cup all-purpose flour
Preheat oven to 375-degrees and grease a 9-inch by 13-inch baking dish.
Add the muffin mix, eggs, sour cream, milk, vegetable oil, sugar, and honey to a large mixing bowl and mix until combined.
Add the flour and mix.
Pour the batter into the baking pan and bake for 20-25 minutes or until the top is golden brown.
Let cool and serve.
Tips:
- If you don't like sour cream, you can switch it out and use plain Greek yogurt instead.
- For variety, use maple syrup in place of honey.
- The recipe can also be made in a large, greased cast iron skillet.
- We love to add some butter on top while the cornbread is still warm. There's nothing better than melted butter on top of warm cornbread.
- We also like to drizzle a little bit of honey on top, as well.
- Don't over mix, or it can cause the cornbread to come out crumbly.
