The Best Jiffy Sweet Cornbread Recipe

Sweet Jiffy Cornbread is the perfect side dish or dessert for any occasion. The recipe is an easy one and only requires a few ingredients.

Ingredients

  • Two 8.5 ounce boxes Jiffy Corn Muffin Mix
  • 2 eggs
  • 3/4 cup sour cream
  • 2/3 cup milk
  • 3 Tablespoons honey
  • 3 Tablespoons sugar
  • 1/2 cup vegetable oil
  • 1/3 cup all-purpose flour

Instructions

  • Preheat oven to 375-degrees and grease a 9-inch by 13-inch baking dish.
  • Add the muffin mix, eggs, sour cream, milk, vegetable oil, sugar, and honey to a large mixing bowl and mix until combined.
  • Add the flour and mix.
  • Pour the batter into the baking pan and bake for 20-25 minutes or until the top is golden brown.
  • Let cool and serve.

Notes

Tips:

  • If you don't like sour cream, you can switch it out and use plain Greek yogurt instead.
  • For variety, use maple syrup in place of honey.
  • The recipe can also be made in a large, greased cast iron skillet.
  • We love to add some butter on top while the cornbread is still warm. There's nothing better than melted butter on top of warm cornbread.
  • We also like to drizzle a little bit of honey on top, as well.
  • Don't over mix, or it can cause the cornbread to come out crumbly.
