Double Chocolate Chip Muffins Recipe

This Double Chocolate Chip Muffins Recipe with chocolate pudding and chocolate fudge cake mix is a sweet and moist treat. This is the best chocolate chip muffin recipe out there, as well as one of the easiest. Y’all are gonna love it.

I’ll take pretty much anything double chocolate. I take it single or triple chocolate, too. I am a major chocoholic. It’s all or nothing with me, well, actually just all.

I was craving something chocolatey and these double chocolate chip muffins hit the spot. I added instant chocolate pudding and I think that really added a lot of flavor to the dessert.

The recipe is a piece of cake–literally. I used chocolate fudge cake mix for the base. It makes the recipe super easy and quick. It’s perfect for parties, after-school snacks, or just for sittin’ around the kitchen and munchin’ on a treat.

The kids really liked these muffins, as well. My older son tends to be a little more picky about what I make, but he ate one pretty fast. That’s usually a good indication they are good.

Add the chocolate fudge cake mix to a large bowl.

Add the instant pudding powder to the bowl. It’s a little hard to see the difference between the cake mix and the pudding mix, but they’re both there. I love adding instant pudding to recipes. It thickens quickly and adds a lot of flavor.

Pour the water into the bowl. The water is going to activate the instant pudding when you mix it. The pudding will get thicker over the next few minutes. It really helps keep moisture in the muffins.

Crack the eggs into the bowl. Eggs also add moisture to any type of muffin, cookie, or cake. I think the fourth egg is hidden down in the bowl somewhere.

Pour the oil into the bowl.

Finally, add the vanilla to the mixture. Mix everything together.

Don’t you love the way the mixture looks? Shiny and thick from the cake mix and the pudding. Mmm… It’s gettin’ good. This really is the best chocolate muffin recipe.

And lastly, pour the chocolate chips into the mix. I used mini chips, but you can also use regular-sized chocolate chips, as well. Either one will work.

Scoop the batter into a muffin tin about 3/4 of the way full. Bake for 30 minutes, or until a cake tester comes out clean. You can sprinkle a few of the chocolate chips right on top, as well.

The double chocolate chip muffins recipe turns out so moist and delicious. They are truly a great snack or dessert.

I love them when they come right out of the oven. They are so delish when they are hot. You can also toast them later and they are still just as moist and fresh.

Ingredients
  

  • 18-1/4 oz. chocolate fudge cake mix
  • 3.9 oz chocolate instant pudding mix
  • 4 eggs
  • 3/4 cup water
  • 1/2 cup oil
  • 1/2 tsp. vanilla
  • 8 oz. mini semi-sweet chocolate chips

Instructions
 

  • Preheat oven to 350-degrees.
  • Grease the muffin tin.





  • Add the chocolate fudge cake mix, dry instant pudding powder, water, eggs, oil, and vanilla to a large bowl. Mix together until well blended.
  • Add the mini semi-sweet chocolate chips and mix.
  • Scoop into muffin tin 3/4 of the way full.
  • Bake for 30 minutes or until cake tester comes out clean.
