Broccoli cheese casserole is a popular dish year round, but especially around the holidays.

And adding the cheese mixture and butter crackers makes it a great dish for the pickiest eaters who aren’t crazy about vegetables.

The vegetable dish is made with cooked broccoli, mayo, mushroom soup, cheddar cheese, and buttery Ritz Crackers for a rich and flavorful addition to any table.

The Perfect Holiday Side Dish

Broccoli cheese casserole is a very popular and traditional holiday recipe. It’s the perfect side dish for the Thanksgiving and Christmas holidays. And, besides the fantastic flavor combinations, it’s super easy to make.

You won’t have to slave over the dish in the kitchen. It takes about 10 minutes to make and get into the oven.

It’s always great to be able to add dishes to the holiday table that everyone loves and is easy to make.

  • Broccoli, cooked
  • Mayonnaise
  • Shredded cheddar cheese
  • Can of cream of mushroom soup
  • Eggs
  • Ritz Crackers, crushed
  • Butter

How Do I Make the Cheesy Broccoli Casserole?

  1. Add the mayonnaise, cheddar cheese, mushroom soup, and eggs to a large bowl and mix well.
  2. Next, add the cooked broccoli to the bowl and mix until combined.
  3. Pour the broccoli mixture into a 9″ x 13″ greased casserole dish.
  4. Crush the crackers and sprinkle on top.
  5. Melt the butter and pour it over the crackers.
  6. Bake for 35 minutes and serve.

Step-By-Step Directions For Making the Broccoli Cheese Casserole Recipe

Start by adding the mayonnaise and the cream of mushroom soup to a large bowl.

If you’d like to cut out some of the fat in the recipe, you can switch out the mayo for light sour cream. You will use the same measurement.

If you don’t like mushroom soup you can substitute it with either cream of broccoli cheese soup, or cream of cheddar cheese soup.

Next, add the shredded cheddar cheese to the bowl.

I used sharp cheddar cheese, but you can use mild shredded cheese if you’d like.

Now, add the beaten eggs to the bowl and mix everything.

If you’d like to avoid extra dishes, you can start the recipe with the eggs and beat them in the bowl, and then add the other ingredients.

Add the cooked broccoli to the bowl and stir until completely coated.

To make life easy, I cooked the broccoli in a large bowl in the microwave. My son was sweet enough to cut up the broccoli, rinse it off and place it in a large bowl.

We added about 1/4 cup of water to the bowl and covered it with plastic wrap and cooked it for five minutes in the microwave.

It helped steam the broccoli and get it ready for the casserole dish.

You can also cook it on the stovetop, as well for nice tender broccoli.

If you decide to use the microwave, just be sure you have a dish that can withstand the heat. I used the Glad Press’n Seal for the covering, which helped keep the steam in the bowl.

Pour everything into a 9″ x 13″ casserole dish and cover with crushed Ritz Crackers.

Having a crunchy topping on a creamy casserole is a great texture combination.

Finally, pour the melted butter over the top of the Ritz Crackers and bake for 35 minutes.

You’re only using two tablespoons of melted butter, so be sure to drizzle carefully. If you’d like more butter, just melt more and pour it on! Butter is always a good thing.

Once cooked, the top of the casserole will be golden brown and ready to eat.

Can I Make The Dish Ahead Of Time?

Yes, you can make it ahead of time. I would only make it one day ahead of time to keep it fresh.

Be sure to add the crackers and butter right before you put it into the oven. If you add the crackers too soon, they will soak up some of the moisture and become soft.

How To Store The Broccoli Casserole

Store the casserole in an airtight container and keep it refrigerated.

You just can’t beat the butter-rich crunchy Ritz Crackers over a bed of cooked broccoli and flavorful ingredients.

  • 20 ounces of broccoli cooked

  • 1 – 10.5 oz. can cream of mushroom soup
  • 2 eggs beaten

  • 2 Tbsp. butter melted

Instructions
 

  • Preheat the oven to 350-degrees and grease a 9" x 13" casserole dish.
  • Add the mayonnaise, cheddar cheese, mushroom soup, and eggs to a large bowl and mix well.
  • Next, add the cooked broccoli and stir until coated.
  • Pour the broccoli into the casserole dish and cover with the crushed Ritz Crackers.

TIP: fo a more low-fat version, switch out the mayonnaise for low-fat sour cream.
