- 20 ounces of broccoli cooked
- 1 cup mayonnaise
- 1 cup shredded cheddar cheese
- 1 - 10.5 oz. can cream of mushroom soup
- 2 eggs beaten
- 2 cups Ritz Crackers crushed
- 2 Tbsp. butter melted
Preheat the oven to 350-degrees and grease a 9" x 13" casserole dish.
Add the mayonnaise, cheddar cheese, mushroom soup, and eggs to a large bowl and mix well.
Next, add the cooked broccoli and stir until coated.
Pour the broccoli into the casserole dish and cover with the crushed Ritz Crackers.
Melt the butter and pour it over the crackers.
Bake for 35 minutes and serve.
TIP: fo a more low-fat version, switch out the mayonnaise for low-fat sour cream.
If you don't like mushroom soup, you can use cream of broccoli cheese soup or cream of cheddar cheese soup.
