Broccoli Cheese Casserole

Broccoli cheese casserole is a super easy side dish to make, is perfect for any meal, and very popular around the holidays.

Ingredients

  • 20 ounces of broccoli cooked
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 - 10.5 oz. can cream of mushroom soup
  • 2 eggs beaten
  • 2 cups Ritz Crackers crushed
  • 2 Tbsp. butter melted

Instructions

  • Preheat the oven to 350-degrees and grease a 9" x 13" casserole dish.
  • Add the mayonnaise, cheddar cheese, mushroom soup, and eggs to a large bowl and mix well.
  • Next, add the cooked broccoli and stir until coated.
  • Pour the broccoli into the casserole dish and cover with the crushed Ritz Crackers.
  • Melt the butter and pour it over the crackers.
  • Bake for 35 minutes and serve.

Notes

TIP: fo a more low-fat version, switch out the mayonnaise for low-fat sour cream.
If you don't like mushroom soup, you can use cream of broccoli cheese soup or cream of cheddar cheese soup.
