Ingredients

  • 4 skinless, boneless chicken breasts
  • Onion soup mix
  • Dijon mustard
  • Soy sauce
  • Apricot preserves

How To Make The Apricot Chicken

Start by adding the chicken to the slow cooker. Sprinkle the onion soup mix on top of the chicken.

Next, add the Dijon mustard and soy sauce to the slow cooker. Spread the apricot preserves on top, place the lid on the cooker, and cook for eight hours on low temperature.

Storage and Reheating Instructions

Store any leftover apricot chicken in an airtight container and keep it refrigerated. To reheat, place some in a microwave-safe bowl, add a tablespoon of water or chicken broth, and heat for two to three minutes or until the chicken is heated through.

Ingredients
  

  • 4 skinless boneless chicken breasts
  • 1 ounce packet of dried onion soup mix
  • 4 teaspoons of Dijon mustard
  • 2 Tablespoons of soy sauce
  • 12 ounce jar of apricot preserves

Instructions
 

  • Add the chicken to the crock pot.
  • Sprinkle the onion soup mix on top.
  • Next, add the Dijon mustard and soy sauce.
  • Spread the apricot preserves over the top, cover with the lid, and cook on low for eight hours.
  • Eat the chicken whole or shred and add to rice or mashed potatoes.

  1. All of my local grocery stores, even walmart, are out of chicken. No legs, no wings, no breasts, no breast strips . . . nothing. I was able to buy 2 guinea hens but that’s it. I usually buy those around the holidays because sometimes rather than making two turkeys we have a couple of small guinea hens to replace at least one of the turkeys. Even my local healthfood store didn’t have any chicken, plenty of chinese supplied hamburger and pork around though. Yuk! I’ve tried local small farmers, etc., but if I can’t get them in my area (rural America) I can’t imagine that any of the larger cities would have access either. What the heck is going on? I know we have supply chain issues (thank you COMMALA and ol’ joe) but this is getting bad. Usually there are at least 2 or 3 local ranchers who have extra chickens on hand but I think they are more reliant on the eggs right now than the chickens! Already we see the nuttiness starting.

    1. I hope they restock there soon. We’ve been ok here finding chicken, but there are some shortages here and there of other grocery items.

    This recipe is fantastic! My kids loved it, and I’m making it for the second time today. I found that in my slow cooker, it only needed about 5 hours on low, but all slow cookers can vary in temperature, so my only feedback is to check it at 4-5 hours to see how much longer it needs to cook. Thank you so much for the easy, delicious recipe!

    1. Hi Rosemarie, you can use chicken legs. They might take a little longer to cook, but legs are great for not drying out. I would add about one more hour on the cooking time.

  5. Cooking it on low for 8 hours made the chicken come out too dry. The sauce was really good. Maybe cooking it for less time would be better.

      Some Crock Pots run a little hotter than others. You can definitely check the chicken an hour earlier and see how it’s doing. Glad you liked the sauce!
