Start by adding the chicken to the Crock Pot. I added frozen chicken to the pot, which will be done in eight hours.

Pouring vinaigrette into the slow cooker with chicken.

Next, pour the vinaigrette into the slow cooker. If you don’t like the flavor as strong, you can add half the amount.

Adding pineapples and juice on top of chicken in the Crock Pot.

Finally, add the canned pineapple and juice to the slow cooker. Place the lid on top and cook for eight hours on low.

Shredded chicken in the Crock Pot.

Once the chicken is done cooking, take two forks and shred it. It should fall apart easily.

Storage and Reheating Instructions

Store any leftovers in an airtight container and refrigerate them. To reheat the Hawaiian chicken, place it in a microwave-safe bowl. Add a tablespoon of water or chicken broth to the dish and heat for two to three minutes or until hot.

Notes

If you're not a big fan of vinaigrette, you can use half the amount or a different dressing.
I used frozen chicken because I often forget to set it in the refrigerator to thaw the night before. You can use frozen or refrigerated. I would cook them both for eight hours to get the meat tender.

I’ve made this many times…..however, I don’t care for that much balsamic, so I substitute an equivalent amount of pineapple juice for the balsamic, sometimes adding just a splash or two of balsamic. It’s really very, very good and makes great leftovers.
