I want this made with left over rotisserie chicken from Costco. How would I adjust the time and can it still be done in a slow cooker?
Hi Brandy,
I haven’t tried that yet, but I were going to, here is what I would do: Whisk the melted butter and flour smooth in the slow cooker, add the honey, soy sauce, lemon juice, garlic powder, and pepper (skip the salt, rotisserie chicken is already salty), and cook on HIGH for 45 minutes to 1 hour until thickened. Fold in 4 cups of pulled rotisserie chicken, switch to LOW for 20 to 30 minutes to heat through, and serve over rice.
You could actually make it easier by just doing the sauce in a saucepan in about 10 minutes and then adding the chicken and letting it warm up a little and that will save you time with the slow cooker if you already have the cooked chicken.
