How to Make My Easy Beef Enchilada Casserole
You’re only going to need a few things to make this ground beef enchilada casserole. You layer the beef mixture with the tortillas, and in no time, it’s done!
If you’d prefer to lighten things up, you can swap ground turkey for lean ground beef. You can also use a can of black beans or pinto beans in place of the refried beans.
- Preheat the oven to 375 degrees and grease a 9-inch by 13-inch baking dish with nonstick cooking spray.
- Cook the ground beef and onions. Drain the grease.
- Next, add the taco seasoning, green chiles, and refried beans and mix well.
- Pour a little bit of the enchilada sauce on the bottom of the baking dish.
- Spoon a little bit of the meat mixture over the sauce.
- Next, cover with tortillas.
- Add some more meat mixture over the tortillas.
- Sprinkle a handful of shredded cheese over the meat mixture and repeat two to three more times, and end with cheese sprinkled on top.
- Bake for 20-25 minutes or until the entire casserole dish is hot and serve.
Step-By-Step Instructions
Start by adding the ground beef to a large saucepan.
Add the diced white onions to the saucepan and cook the two ingredients. Drain the grease when done cooking.
Add the green chiles to the saucepan.
Pour the taco seasoning into the pan and mix.
Add the can of refried beans to the browned ground beef and mix the ingredients.
Grab your flour tortillas and cut them into four pieces.
Cutting the tortillas is a totally optional step. I like mine cut up into smaller pieces because then the tortilla doesn’t overlap, but it’s completely up to you to decide how you want it.
The first thing you want to do it pour a little bit of enchilada sauce on the bottom of the baking dish. I used enough just to cover it.
Spread some of the meat mixture over the enchilada sauce.
Next, line the pan with the flour tortillas.
Pour a little bit more enchilada sauce over the tortillas and add some more ground beef.
Sprinkle the Mexican cheese blend over the top of the meat and repeat the process a couple more times, ending with cheese on top.
Bake the casserole in the preheated oven for 20-25 minutes and serve!
