How to Make My Easy Beef Enchilada Casserole

You’re only going to need a few things to make this ground beef enchilada casserole. You layer the beef mixture with the tortillas, and in no time, it’s done!

If you’d prefer to lighten things up, you can swap ground turkey for lean ground beef. You can also use a can of black beans or pinto beans in place of the refried beans.

  1. Preheat the oven to 375 degrees and grease a 9-inch by 13-inch baking dish with nonstick cooking spray.
  2. Cook the ground beef and onions. Drain the grease.
  3. Next, add the taco seasoning, green chiles, and refried beans and mix well.
  4. Pour a little bit of the enchilada sauce on the bottom of the baking dish.
  5. Spoon a little bit of the meat mixture over the sauce.
  6. Next, cover with tortillas.
  7. Add some more meat mixture over the tortillas.
  8. Sprinkle a handful of shredded cheese over the meat mixture and repeat two to three more times, and end with cheese sprinkled on top.
  9. Bake for 20-25 minutes or until the entire casserole dish is hot and serve.

Cutting the tortillas is a totally optional step. I like mine cut up into smaller pieces because then the tortilla doesn’t overlap, but it’s completely up to you to decide how you want it.

How To Store The Ground Beef Enchilada Casserole

If you have any leftovers, store them in an airtight container so you can enjoy them over the next few days. It’s so rare that my husband and kids leave any of this casserole behind, though.

Leftovers do need to be refrigerated.

You can also cover the dish with some plastic wrap and keep it in the refrigerator. To reheat the enchilada casserole, place a piece on a microwave-safe plate and heat for two or more minutes.
