30-Minute Beef and Noodles Recipe In One Pot

- Ground beef: I like 80/20 because it has the best flavor. If you go super lean, just know it can taste a little dry—add a splash more cream (or a pat of butter), and you’re back in business.
- Minced onion: This is my “shortcut” onion. If you’ve got a real onion handy, you can use a few tablespoons of diced onion instead—just cook it a minute or two longer.
- Minced garlic: Fresh is great, but the jar stuff works just fine and saves you a lot of time. Toss it in after the beef so it doesn’t burn and turn bitter.
- Egg noodles: Wide egg noodles are the best here because they grab onto that creamy sauce. Don’t overcook them—pull them when they’re just tender because they’ll keep softening in the sauce and get gooey.
- Broth (beef or chicken): Beef broth gives it that deeper, “Sunday supper” flavor. Chicken broth works too if that’s what you’ve got. If the noodles soak up the broth too quickly, add a little more, a splash at a time.
- Heavy cream: This is what makes it creamy. Keep the heat low once it goes in, so you keep the cream smooth.
- Sharp cheddar: the flavor comes from it. If you can, shred it yourself; it melts much better than pre-shredded bags. If not, it still tastes fantastic.

Tools You Will Need
This is a one-pot dish, so you won’t have many dishes (yay!). But you will need a large skillet and a lid. The lid keeps the heat in and helps the noodles cook faster.
How To Make Beef And Noodles

Start by adding the ground beef, garlic, and minced onion to a large skillet on medium heat. After it cooks, drain the grease.

Next, add the egg noodles, heavy cream, and broth. If you’d rather lighten it up, swap the cream for milk. If you do, the sauce will be slightly less rich and slightly thinner, but still comforting. For the broth, beef broth gives it a deeper, beefier flavor, while chicken broth tastes a little milder and a bit lighter (great if you want the seasonings to really stand out).

Cover with a lid and cook for about 10 minutes until the noodles are tender. Be sure to stir occasionally so the noodles don’t stick to the bottom of the skillet.

Add the shredded cheese, stir, and serve. You can also add some salt and ground black pepper to taste.

If I want a little bread on the side, I will whip up some super moist Jiffy cornbread, or if I am in a hurry, I like to make 3-ingredient biscuits because they can be prepped fast and cooked fast!

You can try different ingredients for different flavor varieties. Here are a few ideas (pick one for the best results):
- For a more savory, deeper flavor, stir in 1–2 teaspoons of soy sauce or 1 teaspoon of Worcestershire into the broth for a richer, more “slow-cooked” taste.
- Veggie boost (easy one-step): Add 1–2 cups frozen mixed veggies when you add the noodles— they warm through as the noodles cook and make it a complete meal.
- Extra-creamy comfort: Before adding the noodles, stir in 4 oz of cream cheese until melted for a thicker, ultra-creamy sauce.
- Optional seasoning shortcut (if you want a twist): Sprinkle 1–2 teaspoons ranch seasoning or onion soup mix over the beef while browning for a bolder, tangier flavor (start small since both can be salty).
Storage and Leftovers
Any leftover beef and noodles can be stored in an airtight container and refrigerated. Add some to a microwave-safe bowl to reheat and heat for two to three minutes or until the meat is hot.

can you substitute the heavy cream for anything else? Also what did you mean you can substitute the milk if you don’t want less fat?
