Slow Cooker Glazed Carrots with Brown Sugar is a delicious side dish for any meal, including holidays. The carrots are perfect for Thanksgiving, Christmas, and Easter. They are easy to make and only take a few minutes to prepare.
I love the holidays. We all know that if the holidays are coming, there’s gonna be food.
I know sometimes we dread the holidays because we might get stuck in the kitchen and miss out on the family time that is happening outside of the kitchen.
I can remember when we’d gather at my grandmother’s house and she would cook a large meal for all of us. She spent all that time in the kitchen, which she loved, but we all sat in the other room and talked.
Although, her kitchen table was right in the middle of her kitchen, so we’d wad up in there, too–especially if there was something to nibble on.
But, I love recipes that are easy and involve a slow cooker. Slow cookers make me happy. They are so easy, and the food almost always comes out so tender and delicious. And, we get to hang out with family while it does all of the work!

Add the carrots to the slow cooker. Melt the butter and pour it over the carrots.
Stir the carrots until they are coated. My carrots were still cold, so the butter hardened quickly on the carrots after I poured it on.
Add the brown sugar, ginger, ground cinnamon, salt, nutmeg, and parsley to a bowl.
Give it a good stir and pour it over the carrots.
Stir the carrots until they are covered with the ingredients.
Place the lid on the slow cooker and turn it on high for three hours.
Stir the carrots at least once while cooking.
Take them out of the slow cooker and serve!
This is a recipe for about three to four people. I cooked it in a small 3-quart slow cooker. You can easily double the recipe for about six people, but you will need at least a 5-quart slow cooker.
- 1-pound bag baby carrots
- 2 Tbsp. butter (melted)
- 1/2 cup light brown sugar
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/4 tsp. nutmeg
- 1/4 tsp. ginger
- 1/2 tsp. parsley
- Add the carrots to the slow cooker.
- Melt the butter, pour it over the carrots, and stir to coat.
- In a small bowl, mix the brown sugar, cinnamon, salt, nutmeg, ginger, and parsley.
- Pour over the carrots and stir to coat.
- Cook on high for 3 hours, stirring once during the cooking process.
