Ingredients
- Pork chops – bone in preferred, but boneless is fine
- Salt
- Ground black pepper
- Olive oil
- Butter – real butter, not margarine
- Garlic
- Thyme – or rosemary – you can omit fresh herbs if youโd just prefer garlic

Step-By-Step Instructions
Heat a heavy bottomed pan over medium-high heat and add the olive oil. Season the pork chops with salt and pepper on both sides.
Once the oil begins to lightly smoke, add the pork chops to the skillet. Do not move them around so they will get a good sear on them. Let them cook for four minutes, then flip them and cook for another four minutes.ย Use a meat thermometer to check for doneness (145ยฐF).ย Turn over and continue cooking until the pork chops reach the correct internal temperature. Remove pork chops from the pan and keep them warm.
Melt the butter in the pan and add the garlic and herbs.ย Let the garlic lightly brown. Then, add the pork chops back into the pan and spoon the butter over the chops. Let them cook about two minutes on each side, remove them from the heat, and serve.
Tips and Storage
- Make sure the oil is nice and hot before adding the pork chops to the skillet. This will help them sear and form a nice crust to prevent drying out as they cook.
- Donโt like the fat?ย Donโt cut it off until after the chops have cooked.ย This will help them have more flavor and keep from getting dry.
- Don’t let the meat thermometer touch the pan or you will get an incorrect reading. If you like pork a little less pink, you can cook it to 165ยฐF.
- Store the pork chops in an airtight container in the refrigerator for up to five days.
- To reheat the pork chops, add some butter or oil to the skillet and cook until hot, making sure to get the pork to the right temperature.
