Beef stew is one of our favorite meals around here, especially with two growing teenagers. I love making the hearty dish because it’s such an incredibly easy recipe to make.

It takes about 15 to 20 minutes to get everything in the Crock Pot to start cooking.

Then, you can go about your day and come back in seven to eight hours, and you will have a delicious meal with tender beef, soft potatoes, and flavorful vegetables.

And that’s perfect after those cold and long days. You don’t have to cook because dinner is ready.

The recipe is a family favorite around here.

Step-By-Step Instructions For Crock Pot Beef Stew

Cut up stew meat in a Crock Pot

Spray the slow cooker with non-stick cooking spray and add the stew beef.

I bought the stew beef already cut up from Wal-Mart, and that helped shave a lot of prep time from the recipe.

It’s not much more expensive than buying a full piece of meat and cutting it yourself, so keep that in mind.

Peeled and sliced potatoes in a Crock Pot

Next, add the peeled and sliced raw potatoes.

I usually buy a few potatoes at a time, but I was in Aldi’s and bought a five-pound bag of potatoes for only a few dollars.

It was a great deal, and I had enough potatoes left over for mashed potatoes the next night and my 5-ingredient ground beef casserole recipe a few nights later!

Stew meat, potatoes, carrots, and onions for beef stew

Add the carrots and diced onions to the stew.

These baby carrots look a little sad and dry, but they were perfect for the beef stew and they cooked up so flavorful.

I bought the baby carrots at the grocery store instead of carrots that needed to be peeled to shave even more time off of prepping the dish. Little things like that are great for saving time.

Beef stock being poured over beef stew in a Crock Pot

Pour the beef stock over the veggies and beef. Next, you’ll add some water to the slow cooker, as well.

I used regular beef stock, but you can use low-sodium beef broth if you want to lower the sodium content.

Onion soup mix on top of beef stew

Finally, add the minced garlic, salt, pepper, and the package of dry onion soup mix to the Crock Pot and give it a stir.

The onion soup mix has quite a bit of sodium in it, so if you’re watching your sodium intake, you can leave the salt out.

For this recipe, you can use the Lipton onion soup mix or a generic brand.

Beef stew in the slow cooker

Replace the lid and set the slow cooker for seven to eight hours on low.

Sometimes the meat is tender enough at seven hours, but this time it took eight hours to get it to the tender point that I like.

This is such a great beef stew recipe, and it will actually take you longer to read this than it will to throw the ingredients into the Crock Pot unless you’re a super fast speed reader!

The easy beef stew recipe creates plenty of rich flavor, and will keep you nice and toasty in the winter months. You can add some crackers or some crusty bread on the side.

If you need a large main dish for a party or church potluck, this recipe is a good one.

Optional Ingredients

One of the great things about this recipe is that you can switch things out from time to time. Here are a few ideas.

  • Red potatoes
  • Red wine
  • Yukon gold potatoes
  • Garlic powder, garlic cloves, or minced fresh garlic
  • Onion flakes (instead of diced onions)
