6-Hour Crock Pot Poor Man’s Steaks with Mushroom Gravy

Patty up some thick ground beef and cook it low-and-slow in a creamy mushroom gravy until it’s tender and easy to cut with a fork for this easy Crock Pot meal. I started making this one when I needed a budget-friendly “meat and gravy” dinner I could prep fast. The first time I made this, my teenagers piled it over mashed potatoes and asked for more gravy. I knew it was a keeper.

The recipe is five ingredients, it’s perfect for beginners, and it’s the kind of recipe that makes you look like you had a plan…even if you didn’t. There. I’ve said it.

What “Poor Man’s Steaks” Are (And Why This Version Is Different)

Depending on where you grew up, “poor man’s steak” can mean a few things. Some recipes use cube steak. This one is the ground-beef-patty version. Think hamburger steak or Salisbury-style, but this one is made even easier because the slow cooker does the work, and the gravy is built right in.

Julie’s Quick Note About The Soup (Mushroom Concerns And Options)

The recipe uses cream of mushroom soup, and yes, it does have little pieces of mushroom in it, but they are tiny (I have a picky eater, so I understand). I am not a huge mushroom fan, but I like the soup. If you’ve got someone in the house who’s not a mushroom fan, here are your most realistic options:

  • Swap to cream of chicken or cream of celery (same can size). I’ve done it when I was out of mushroom soup, and the gravy still comes out creamy and good, just a different flavor.
  • If the issue is texture, not flavor, you can usually get away with whisking the soup and water really well so the gravy is smoother once it’s cooked.

How Big To Make The Patties (Thick vs. Thin)

I usually make four thick patties from two pounds of ground beef. That’s not a bad thing, as thicker patties hold together well in the slow cooker and stay nice and juicy. But you can absolutely make smaller patties if you want more servings or faster heat-through at the table.
My rule: 6–8 patties = thinner, more “cafeteria-style” hamburger steaks (also great for kids).
4 patties = big, hearty portions.

What To Serve With Smothered Steak

I love serving the steak on homemade mashed potatoes, because it is honestly such a comforting meal. You can also serve it with rice or a side of veggies. Adding in some warm, buttered, moist Jiffy cornbread on the side is a great way to round out the meal, as well.

Step-By-Step Instructions

Create the patties and place them in the bottom of the slow cooker. Sprinkle the onion soup mix and black pepper on top.

I like to press a little dimple in the center of each patty with my thumb. It helps them cook flatter and more evenly instead of puffing up in the middle.

Next, spread the mushroom soup over the top and pour the water around the sides of the beef.

Cover and cook on the low temperature setting for 6 hours. This is one of those recipes where low heat matters. Cooking ground beef patties on high can tighten the meat and make the edges a little tough, and the gravy can cook down too fast around the sides. Low heat gives you a more tender cook and a better texture.

Helpful Tips (The Stuff I Wish Someone Told Me The First Time)

Gravy too thick? Add a splash of water at the end

Slow cookers vary a lot and can cook at different temps. If your gravy looks thicker than you want after 6 hours, stir in a little water. Just add 1 to 2 tablespoons at a time until it loosens up.

Gravy too thin? Let it sit uncovered for a few minutes

If the gravy is thinner than you like, take the lid off and let it sit for about 10–15 minutes. It thickens as it cools slightly. (And if you stir it, it thickens even more).

What size slow cooker works best?

A 6-quart slow cooker is the easiest for this recipe, especially if you’re doing four big patties. They need some room, and you want the gravy to cover and circulate. If you have a smaller slow cooker, you can still do it, but you’ll just want to make smaller patties so they fit in a flatter layer or cut the recipe in half.

Storage And Reheating

If you have any leftovers, be sure to store them in an airtight container and refrigerate them for up to 4 days.

How to reheat

  • Microwave: Reheat in a bowl with extra gravy over the top so it stays moist.
  • Stovetop: Warm on low in a skillet or saucepan with a splash of water to loosen the gravy.

Can you freeze it?

Yes, this one freezes well. Here’s how you want to do it.

  • Let everything cool completely.
  • Freeze patties with gravy in freezer-safe containers for up to 2–3 months.
  • Thaw overnight in the refrigerator before reheating.

FAQs

Can I make this with cube steak instead of ground beef?

This specific recipe is written for ground beef patties. Cube steak is a different cut and behaves differently in the slow cooker. If you want the “cube steak poor man’s steak” style, the cook time and texture will be different.

Do I need to brown the patties first?

No, and I don’t for this recipe. The slow cooker will cook the patties through just fine. If you want to brown them for a little extra color, you can, but it’s an extra step, and this recipe’s whole point is being easy.

Is the gravy really salty with soup mix and canned soup?

It can be on the salty side, depending on the brands you use. That’s why this recipe uses water. It helps stretch the gravy and keeps it from getting too intense. I also don’t add extra salt, but you can taste it at the end and add any if you want.

Can I double it?

You can, but you’ll need a large slow cooker, and you’ll want the patties in as even a layer as possible. If they’re stacked, they’ll still cook, but they’re more likely to break when you serve them. Be sure to check the temperature after 6 hours to make sure they are cooked through. I use a digital thermometer.
