Slow Cooker Hamburger and Vegetable Soup

Ingredients

  • Lean ground beef
  • Salt and ground pepper
  • Diced onion
  • Minced garlic
  • Tomato paste
  • Diced red and orange bell peppers
  • Diced carrots
  • Shredded cabbage
  • Diced potatoes
  • Smoked paprika
  • Dried oregano
  • Dried thyme
  • Diced canned tomatoes
  • Olive oil
  • Salsa (mild or medium)
  • Beef broth

How To Make The Soup

Start by seasoning the ground beef with salt and pepper and browning it in a frying pan. Drain the grease, add the onions, garlic, and tomato paste to the beef, and mix well. Place in the slow cooker.

Next, add the red and orange peppers, carrots, cabbage, and potatoes. Mix in the thyme, oregano, and smoked paprika.

Next, add the tomatoes, salsa, olive oil, and beef broth and mix well. Cover and cook on high for four hours or low for six hours.

Serve with crusty bread and butter.

Can I make this soup in a pot on the stove?

You can make this recipe using a large pot on the stove. Brown the beef in the pot and drain the grease. Add the remaining ingredients and simmer for one hour until the vegetables are tender. The longer you simmer the soup, the deeper the flavors. I recommend simmering for at least three hours.

Storage and Reheating Instructions

Store the hamburger soup leftovers in an airtight container or cover with plastic wrap and keep it refrigerated. To reheat, pour some in a microwave-safe bowl and heat for about two to three minutes, stirring halfway through. Continue heating if needed.

Ingredients
  

  • 1 pound lean ground beef
  • 2 teaspoons salt
  • 1/2 teaspoon ground pepper
  • 1 medium onion diced
  • 4 cloves of garlic minced
  • 3 tablespoons tomato paste
  • 1 red bell pepper diced
  • 1 orange bell pepper diced
  • 3 carrots diced
  • 2 cups shredded cabbage
  • 2 potatoes diced
  • 1 teaspoon smoked paprika
  • 2 tablespoons dried oregano
  • 2 tablespoons dried thyme
  • 28 ounce 3½ cups can of diced tomatoes
  • 2 tablespoons olive oil
  • 1 cup salsa mild or medium
  • 4 cups beef broth

Instructions
 

  • Season the ground beef with salt and pepper and brown in a frying pan. Drain the grease.
  • Add the onions, garlic, and tomato paste to the beef, mix well, and place in the slow cooker.
  • Add the red and orange peppers, carrots, cabbage, and potatoes.
  • Mix in the thyme, oregano, and smoked paprika.
  • Stir in tomatoes, salsa, olive oil, and beef broth.
  • Cover and cook on high for 4 hours or low for 6 hours or until the veggies are tender.
  • Serve in a soup bowl with a thick slice of bread or a roll.  Garnish with parsley.

Notes

  • Frozen vegetables work great in this soup.
  • You can add whatever vegetables you think would taste great. Ideas include green beans, corn, and celery.
  • The soup freezes well. For best results, chill the soup before putting it in freezer bags or containers. It can be frozen for up to six months. This soup makes a great gift for friends or relatives who may be feeling “under the weather.”

    I like the idea of it, even a smaller serving size would be great for people with small families with no kids… there are alot of us also. Soup sounds good but I don’t want to make that much for just two people.
