Easy and cheesy funeral potatoes are one of the best potato dishes out there.
They are the perfect side dish for any meal, as well as potlucks, holiday dinners, and family gatherings.

Ingredients For Funeral Potatoes
- 32 oz. diced hash brown potatoes
- Butter
- Can of cream of chicken soup
- Shredded cheddar cheese
- Sour cream
- Corn Flakes
- Minced onion seasoning
- Pinch of salt and black pepper

- Oven
- Large bowl
- Spatula
- 13″ x 9″ casserole dish
- Non-stick spray

Step-By-Step Instructions

To begin making the cheesy potato recipe, start by adding the cubed potatoes to a large bowl.
I used frozen potatoes because it just makes life easier around here. They don’t have to be frozen in order to cook them, though.
I sort of break them up while they are still in the bag, that way they aren’t stuck together.

Next, add the shredded cheddar cheese to the bowl.
For this recipe, I used sharp cheddar cheese. You can use mild or sharp, depending on your preference.

Now, pour the condensed cream of chicken soup into the bowl.

Add the sour cream.

Sprinkle the onion seasoning, salt, and pepper on top and mix it all together.

Once you have everything mixed together, slide the cheesy potato casserole into the casserole dish and spread it out.
Place it in the oven and bake for 20 minutes.

Remove the funeral potatoes from the oven and sprinkle the Corn Flakes on top.

Melt the butter and pour it over the Corn Flakes and return to the oven for 20 more minutes.
The recipe creates a soft potato inside and a crunchy topping. And the buttery Corn Flakes on top are delicious.
How To Store The Funeral Potatoes
Store the funeral potatoes in an airtight container or cover with plastic wrap. You will need to keep it refrigerated until you are ready to reheat them again.
How To Reheat The Funeral Potatoes
You can reheat the potatoes in the microwave in a microwave safe bowl for about two minutes.
You will not have a crispy topping when reheating in the microwave.
What If I Don’t Have Cream Of Chicken Soup?
You can use another soup such as cream of mushroom soup, cream of celery soup, or cream of potato soup. But, it will create a little bit of a different flavor.

Do the instructions change if you can’t find frozen, diced potatoes? I think I’m going to have to use regular peeled potatoes (not frozen). Do I need 32 oz? Do cooking times change? Thanks!
If you cut the potatoes small, you will still have to cook them a little longer because they will be raw. 32 ounces is a good amount for the potatoes. I would say you need to cook your potatoes 15 to 20 minutes more, but check them after the first 20 minutes and see how they are doing. If they are getting soft you might not have to cook them much longer. Once they get soft, you can add the Corn Flakes and butter and continue the directions. It’s getting hard to find frozen potatoes these days!
