Pie Filling Ingredients
- Graham cracker crust (not part of the filling)
- Softened cream cheese
- Sweetened condensed milk
- Shredded sweet coconut
- Crushed pineapple, drained
- Sliced maraschino cherries
- Chopped pecans
- Lemon juice
- Whipped topping

Step-By-Step Instructions
Pour the sweetened condensed milk into a large mixing bowl. I used Eagle Brand for this sweet treat, but you can use your favorite brand, including generic.
Next, add the cream cheese and beat with a hand mixer until the two ingredients are combined and there are no more lumps.
Drain the pineapple juice and add the crushed pineapple to the bowl.
Add the shredded coconut.
Slice the cherries in half and add to the bowl.
Add the chopped pecans.
Pour the lemon juice into the bowl and mix the ingredients.
Fold in the whipped topping. For this recipe, I used Cool Whip, but you can also make your own and add it.
Pour the pie into the graham cracker crust and refrigerate for at least two hours.
For the crust, you can choose to make a homemade graham cracker crust or buy a prepared graham cracker pie crust. If your graham cracker crust is a little crumbly, it will soften up after you add the pie.
