Crock Pot Smothered Pork Steaks With Onion Soup Mix
These Crock Pot smothered pork steaks with onion soup mix are made with cream of mushroom soup, onion soup mix, beef broth, and butter, and they cook on low until the meat is so tender it falls apart. I like to serve them over mashed potatoes with green beans on the side, because that gravy needs something to land on. And they are only five ingredients, so it’s budget- and beginner-friendly.
After making these pork steaks many times, I have figured out that two things make all the difference. First, the full 1/2 cup of beef broth is the perfect amount of liquid. It’s enough to keep everything tender, and second, lay the steaks as flat as you can in a 6-quart slow cooker. A flat layer means every steak cooks evenly and comes out just as good as the one next to it. They will overlap some, but they are better not stacked.

A Quick Note About Pork Steaks
If you’ve never bought pork steaks before, they’re usually sliced from the pork shoulder (often bone-in), so they’re a little different than pork chops. Pork chops are lean and can dry out fast. Pork steaks have more fat and connective tissue, which is exactly why they do so well with low-and-slow cooking.
Also, if your pork steaks are bone-in, you will remove and discard the bones before serving. After 7 to 8 hours on low, the meat will be very tender, and the bones will slide right out.
Julie’s Tips That Make This Work Every Time
Keep The Steaks In A Single Layer (As Much As Possible)
If the pork is stacked tightly, it can cook unevenly, and the sauce can get watery at the bottom. I spread the pork out in the slow cooker so the heat and sauce can move around each piece. A little overlap is fine, but a tall stack is what causes trouble.
Don’t Skip The Beef Broth
This recipe doesn’t rely on “juices.” The 1/2 cup beef broth is what helps turn the soup and onion mix into a real spoonable gravy. It also keeps the edges from drying out during a long cook.
Cook On Low For The Full 7 To 8 Hours
Pork steaks need time. Low heat gives the fat and connective tissue time to break down, which is what gets you that fall-apart texture. If you crank it up, the outside cooks faster than the inside breaks down, and you can end up with meat that’s cooked but still chewy.

How To Make Crock Pot Smothered Pork Steaks

Start by placing the pork steaks in the slow cooker. Sprinkle the onion soup mix evenly over the top. Try to cover the whole surface so you don’t get one super salty spot.

Next, spread the condensed cream of mushroom soup right over the top. I use the back of a spoon or a spatula and just gently push it out to the edges so each steak gets covered. Pour the beef broth over the steaks and add the butter on top.
Cover and cook on low for 7 to 8 hours, until the pork is fall-apart tender. Remove and discard the bones before serving. It will be so tender that the bones will just slide right out.
The gravy on this one is not super thick. If you want to make it thicker, you can add one tablespoon of cornstarch to a couple of tablespoons of water or the broth from the Crock Pot. Whisk it together, then add it back to the Crock Pot and let it thicken for about 20-30 minutes before serving.

My favorite thing to serve with this dinner is slow-cooker homemade mashed potatoes. You can make them the day before, then warm them up when you’re ready to eat, and just pile the pork right on top. You can also top some rice or egg noodles with pork steaks. And if you want to make it even more of a Southern meal, add some creamed corn with pantry ingredients, or if you’re a bread person, a warm homemade dinner roll on the side is a good idea too, because that gravy will not go to waste.
