Slow Cooker Ham Beans and Vegetables

Ingredients
- 1 pound of dried Navy beans
- 6 cups of water
- 4 cups of chicken broth
- 8 celery stalks, diced
- 1/2 pound baby carrots, chopped or whole
- 1/2 yellow onion, chopped
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1.5 to 2 pounds of smoked pork hocks (with the skin pulled off or use some leftover ham bone).
- 1-3/4 pound of smoked center-cut ham, diced

How To Make Slow Cooker Ham, Beans, and Vegetables
- Add the beans to a large mixing bowl. Pour water over them, making sure the water is about 3 to 4 inches over them. Add more water if needed. Let them sit in the water for about one hour.
- After the beans sit for an hour, drain the water and add them to the slow cooker.
- Dice the vegetables and add them to the cooker.
- Cut the ham and place it and the skinless ham hocks in the cooker.
- Sprinkle the salt and pepper over the ingredients.
- Pour the water and chicken broth over the ingredients, place the lid on the top, and cook on low heat for eight hours.




Substitutions and Variations
- Try different beans, such as Great Northern beans, cannellini beans, kidney beans, or your favorites.
- Use leftover ham bone and holiday ham, or buy new.
- Add some different spices, such as cayenne pepper, fresh parsley, bay leaves, or a favorite seasoning packet.
Make Ahead Tips
You can easily dice the vegetables the day before and keep them refrigerated. You can also cut up the ham and have it ready to add everything to the Crock Pot in the morning. I wouldn’t suggest letting the beans soak all night, or they will get mushy when cooked. You can soak them the night before, drain the water, and refrigerate them.
Leftovers and Storage and Reheating
If you have any ham, beans, and vegetables left over, you can store them in an airtight container and refrigerate them. When you are ready to heat them up again, add them to a saucepan and cook on medium heat until the ham reaches 140 degrees. You can also heat the food in the microwave for one to two minutes in a microwave-safe container.
