Ingredients
1poundof dried Navy beans
6cupsof water
4cupsof chicken broth
8celery stalksdiced
1/2poundbaby carrotschopped or whole
1/2yellow onionchopped
1teaspoonsalt
1teaspoonground black pepper
1.5 to 2poundsof smoked pork hockswith the skin pulled off or use some leftover ham bone.
1-3/4poundof smoked center-cut hamdiced
Instructions
Add the beans to a large mixing bowl. Pour water over them, making sure the water is about 3 to 4 inches over them. Add more water if needed. Let them sit in the water for about one hour.
After the beans sit for an hour, drain the water and add them to the slow cooker.
Dice the vegetables and add them to the cooker.
Cut the ham and place it and the skinless ham hocks in the cooker.
Sprinkle the salt and pepper over the ingredients.
Pour the water and chicken broth over the ingredients, place the lid on the top, and cook on low heat for eight hours.
Notes
Add more water to the beans if they soak it all up before the hour.
