Slow Cooker Ham Beans and Vegetables

Ingredients

  • 1 pound of dried Navy beans
  • 6 cups of water
  • 4 cups of chicken broth
  • 8 celery stalks diced
  • 1/2 pound baby carrots chopped or whole
  • 1/2 yellow onion chopped
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1.5 to 2 pounds of smoked pork hocks with the skin pulled off or use some leftover ham bone.
  • 1-3/4 pound of smoked center-cut ham diced

Instructions

  • Add the beans to a large mixing bowl. Pour water over them, making sure the water is about 3 to 4 inches over them. Add more water if needed. Let them sit in the water for about one hour.
  • After the beans sit for an hour, drain the water and add them to the slow cooker.
  • Dice the vegetables and add them to the cooker.
  • Cut the ham and place it and the skinless ham hocks in the cooker.
  • Sprinkle the salt and pepper over the ingredients.
  • Pour the water and chicken broth over the ingredients, place the lid on the top, and cook on low heat for eight hours.

Notes

Add more water to the beans if they soak it all up before the hour.
