Ingredients

  • 1 unbaked refrigerated pie crust
  • 2 eggs
  • 1/2 cup of white sugar
  • 1/2 cup of brown sugar
  • 1/2 cup of all-purpose flour
  • 2 teaspoons of vanilla extract
  • 1 1/2 sticks of softened butter
  • 1 cup of semi-sweet chocolate chips or more if desired
  • Optional: Ice cream and chocolate to drizzle

Instructions

  • Preheat your oven to 325°F (175°C).
  • Roll out your pie shell into a 9-inch pie plate and poke a few holes in the bottom with a fork.
  • In a large bowl or the bowl of a stand mixer, add the eggs and beat. Stir in the vanilla extract.
  • Next, add the brown sugar and white sugar.
  • Add the butter and mix well.
  • Gradually add the flour to the sugar mixture, mixing until combined.
  • Stir in the chocolate chips with a spatula.
  • Pour the cookie dough into your pie shell.
  • Bake for 50-60 minutes or until the top is golden brown and a toothpick, knife, or cake tester inserted into the center comes out clean. The cooking time might vary, so keep an eye on it after the 45-minute mark.
  • Allow the pie to cool on a wire rack for at least two hours before serving. This will ensure a soft cookie texture.
  • Serve your slice of pie with a big scoop of vanilla ice cream or a dollop of whipped cream on top. You can even drizzle some hot fudge for an extra decadent dessert.
