Slow Cooker Hamburger and Vegetable Soup

- 1 pound lean ground beef
- 2 teaspoons salt
- 1/2 teaspoon ground pepper
- 1 medium onion diced
- 4 cloves of garlic minced
- 3 tablespoons tomato paste
- 1 red bell pepper diced
- 1 orange bell pepper diced
- 3 carrots diced
- 2 cups shredded cabbage
- 2 potatoes diced
- 1 teaspoon smoked paprika
- 2 tablespoons dried oregano
- 2 tablespoons dried thyme
- 28 ounce 3½ cups can of diced tomatoes
- 2 tablespoons olive oil
- 1 cup salsa mild or medium
- 4 cups beef broth
Season the ground beef with salt and pepper and brown in a frying pan. Drain the grease.
Add the onions, garlic, and tomato paste to the beef, mix well, and place in the slow cooker.
Add the red and orange peppers, carrots, cabbage, and potatoes.
Mix in the thyme, oregano, and smoked paprika.
Stir in tomatoes, salsa, olive oil, and beef broth.
Cover and cook on high for 4 hours or low for 6 hours or until the veggies are tender.
Serve in a soup bowl with a thick slice of bread or a roll. Garnish with parsley.
- Frozen vegetables work great in this soup.
- You can add whatever vegetables you think would taste great. Ideas include green beans, corn, and celery.
- The soup freezes well. For best results, chill the soup before putting it in freezer bags or containers. It can be frozen for up to six months. This soup makes a great gift for friends or relatives who may be feeling “under the weather.”
