Loaded Mashed Potatoes
Loaded mashed potatoes are not only easy to make but very creamy and delicious. Made with homemade mashed potatoes, cheddar cheese, crumbled bacon, and chives, you can't go wrong with this favorite side dish.

Potatoes
- 4 pounds potatoes mashed
- 1/3 cup butter
- 1 cup milk
- 1 cup sour cream
Topping
- 8 strips of bacon cooked and crumbled
- 2 cups of shredded cheddar cheese divided
- 1/4 cup of chives chopped
- 1 tsp. salt
- 1 tsp. pepper
- Sprinkle of parsley
Cook, drain and mash the potatoes.
Add the butter and milk while mashing.
Next, add the sour cream, 1 cup of shredded cheddar cheese, salt, and pepper and mix.
Spread the mashed potatoes into a 9" x 13" baking dish.
Top with the remainder of the shredded cheese.
Cover with tin foil and bake for 25 minutes.
Top with the bacon, chives, and parsley.
