Ingredients
Ground Beef Casserole
2poundsof ground beef
1teaspoonminced garlic
1Tablespoonminced onion
1ouncepackage of taco seasoning
15.25can of whole kernel corndrained
16ouncecan of refried beans
10ouncecan of Rotel with diced tomatoes and green chilies
1cupof shredded Mexican cheese blend
Cornbread Topping
1 1/4cupsof all-purpose flour
1cupof cornmeal
2teaspoonsof baking powder
1/2teaspoonof salt
1cupof milk
1/2cupof sour cream
1/4cupof vegetable oil
1egg
Instructions
Ground Beef Casserole
Preheat oven to 400 degrees and grease a 9-inch by 13-inch baking dish.
Brown ground beef in a skillet with minced onion and garlic. Drain the grease.
Next, add the taco seasoning, corn, refried beans, and Rotel and mix.
Pour into the casserole dish and spread out.
Sprinkle the cheese over the top of the ground beef mixture.
Cornbread Topping
Add the flour, cornmeal, baking powder, and salt to a mixing bowl and whisk to combine.
Next, add the milk, vegetable oil, sour cream, and egg and mix.
Spread the cornbread batter over the top of the meat mixture and bake for 20-25 minutes or until the cornbread is golden brown.

Some people like to sprinkle more shredded cheese over the top of the cornbread just before it finishes cooking.
