Rub
- 1/2 cup light brown sugar
- 1 Tablespoon smoked paprika
- 1/2 teaspoon garlic salt
- 1/4 teaspoon cumin
- 1/4 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 Tablespoon chili powder
- 1/2 teaspoon dry mustard
Pork
- 3 pounds country-style boneless pork ribs
- 1 cup BBQ sauce your favorite
- 1 white onion sliced
- 1 cup baby carrots
- 1 cup chicken broth
- 1 tablespoon olive oil
Start by mixing the rub ingredients in a bowl and rubbing all over the pork ribs.
Next, heat olive oil in a Dutch oven on medium heat on the stovetop. Add the pork ribs and sear each one for about one minute on each side. Remove the pork ribs and set aside.
Pour the chicken broth into the Dutch oven and scrape the bottom with a wooden spoon.
Add the onions, carrots, and pork. Pour the BBQ sauce on top and spread it all over.
Place the lid on top.
Cook at 350 degrees for one hour.
Lower the oven temperature to 300 degrees and cook for one more hour.
