Baked Corn Casserole Recipe With Cheese

Corn casserole is a comforting blend of creamy corn goodness, green chilies, cheese, and plenty of spice. The easy cheesy corn casserole is a holiday favorite and makes a great side dish.

Ingredients

  • 1 can 15 ounces whole kernel corn, drained
  • 1 can 14.75 ounces cream-style corn
  • 1 can 7 ounces diced green chilies, drained
  • 1-2 teaspoons Mexican-Style chili powder
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 package 8 ounces corn muffin mix
  • 1 1/2 cups shredded sharp cheddar cheese + 1/2 cup separated
  • Optional: a pinch of salt and black pepper

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish or 10-inch cast iron skillet and set it aside.
  • In a large mixing bowl, combine the whole-kernel corn, cream-style corn, diced green chilies, sour cream, melted butter, and Mexican-style chili powder. Stir well to combine.
  • Gradually add the corn muffin mix to the corn mixture, stirring until just combined. Avoid overmixing.
  • Gently fold in 1⁄2 cup of the shredded sharp cheddar cheese.
  • Pour the corn mixture into the prepared pan of your choice, spreading it out evenly.
    Sprinkle the remaining 1 cup of shredded sharp cheddar cheese on top of the corn mixture, spreading it evenly.
  • Place the baking dish in the preheated oven and bake for approximately 40-45 minutes, or until the casserole is golden brown and set in the center.
  • When the casserole is done, remove it from the oven and let it cool for a few minutes before serving.

Notes

If the top of the casserole is getting too brown while baking, place a sheet of aluminum foil over the top until done baking.
This corn casserole can be stored in an airtight container or covered with plastic wrap in the refrigerator for up to three days.
To reheat, place the desired amount in a microwave-safe dish and heat it until warmed through in the microwave. Alternatively, you can reheat it in the oven at 350 degrees for about 15 minutes.
Serve this delicious corn casserole as a side dish alongside grilled chicken, roasted turkey, barbecue ribs, or any main course of your choice.
For added freshness, garnish the baked casserole with chopped green onions or freshly chopped cilantro before serving.
Feel free to customize this recipe by adding ingredients such as diced onions, garlic powder, jalapenos, or cooked and crumbled bacon.
If you don't want to use canned corn, you can use fresh corn for this recipe.
