Ingredients
2cupssliced cooked smoked hamdiced
2Russet potatoessliced thin
1/2cupdiced white onion
1/3cupbutter
3Tablespoonsall purpose flour
2cupsmilk
1-2cupsshredded cheese
1teaspoonsalt
1/2teaspoonblack pepper
Instructions
Preheat oven to 350 degrees and grease a 9-inch by 13-inch baking dish.
Slice the potatoes thin and add them to a large mixing bowl.
Add the diced onions, salt, pepper, and ham to the bowl. Toss the ingredients.
Pour the potato and ham into a greased baking dish and set aside.
In a medium saucepan, add the butter and melt on medium heat.
When the butter melts, add the flour and mix with a whisk. It will be lumpy.
Pour the milk into the saucepan while whisking. Keep whisking until all the lumps are gone.
Bring to a boil.
Add the cheese and stir to melt.
Pour the cheese mixture over the potatoes and ham. Take a spoon and move the potatoes around a little to help the cheese mixture get into all the grooves.
Cover with aluminum foil and bake for 60 minutes or until the potatoes are tender.
Remove the foil and bake for another 15-20 minutes.

If you want the cheese to be a little crusty on top, place your oven on broil and let it cook for about five minutes or so. But keep an eye on it, as it will burn fast.
