Ingredients

  • 2 cups sliced cooked smoked ham diced
  • 2 Russet potatoes sliced thin
  • 1/2 cup diced white onion
  • 1/3 cup butter
  • 3 Tablespoons all purpose flour
  • 2 cups milk
  • 1-2 cups shredded cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Preheat oven to 350 degrees and grease a 9-inch by 13-inch baking dish.
  • Slice the potatoes thin and add them to a large mixing bowl.
  • Add the diced onions, salt, pepper, and ham to the bowl. Toss the ingredients.
  • Pour the potato and ham into a greased baking dish and set aside.
  • In a medium saucepan, add the butter and melt on medium heat.
  • When the butter melts, add the flour and mix with a whisk. It will be lumpy.
  • Pour the milk into the saucepan while whisking. Keep whisking until all the lumps are gone.
  • Bring to a boil.
  • Add the cheese and stir to melt.
  • Pour the cheese mixture over the potatoes and ham. Take a spoon and move the potatoes around a little to help the cheese mixture get into all the grooves.
  • Cover with aluminum foil and bake for 60 minutes or until the potatoes are tender.
  • Remove the foil and bake for another 15-20 minutes.

Notes

If you want the cheese to be a little crusty on top, place your oven on broil and let it cook for about five minutes or so. But keep an eye on it, as it will burn fast.
