Ingredients

  • 12 hard-boiled eggs
  • 1/2 cup Mayonnaise I used Duke's
  • 1 Tablespoon Mustard
  • 1/2 cup Pimento cheese
  • Pinch of Paprika
  • 4 ounce jar of diced pimentos to garnish the tops

Instructions

  • Cook your eggs and allow them to cool. (Or, purchase precooked hard-boiled eggs).
  • Slice the eggs in half and gently place the yolks in a medium mixing bowl. Crush the yolks with a fork.
  • Next, add the mayonnaise, mustard, and pimento cheese and mix well.
  • Spoon the mixture back into the egg halves or pipe mixture into the eggs.
  • Top with some paprika and diced pimentos.

Notes

If you top the eggs with pimentos, dry them off first, because they've been sitting in liquid.
If you want to pipe the mixture into the eggs, scoop it into a Ziplock plastic bag and cut off a small corner. (Start off with a small hole and mark it larger if needed).
Squeeze the mixture into the eggs.
