Snickerdoodle Bars

Snickerdoodle bars might just be one of the best desserts I have ever eaten. They are a chewy soft cookie bar that is out of this world.

Ingredients

Cookie Bar Dough

  • 1/2 cup butter 1 stick, melted
  • 1 egg
  • 1/2 cup sugar
  • 1/3 cup light brown sugar packed
  • 1-1/2 tsp. vanilla extract
  • 1 cup all-purpose flour
  • 1/4 tsp. salt

Topping

  • 1/4 cup sugar
  • 2 tsp. ground cinnamon

Instructions

  • Preheat oven to 350-degrees.
  • Grease 8" x 8" casserole dish with non-stick spray. Line with parchment paper and spray again.
  • Cookie Bar Dough
  • Melt the butter and set aside.
  • In another bowl, add the egg, white and brown sugars and mix.
  • Pour in the butter and mix well.
  • Add the flour, salt, and vanilla extract and mix well.
  • Press into the casserole dish.
  • Topping
  • In a small dish add the sugar and ground cinnamon and mix.
  • Sprinkle over the top of the dough.
  • Bake for 25 minutes or until a cake tester comes out clean.

TIP: You can use less topping if desired.
