With a combination of baby potatoes, carrots, white onion, corned beef, and beef broth, this soup is perfect for winter nights.

Ingredients

  • 2 pounds corned beef cubed
  • pounds baby potatoes
  • 12 ounces carrots diced
  • 1 small white onion diced
  • 2 cups beef broth
  • 3 Tablespoons corn starch
  • 1 teaspoon ground mustard
  • pinch salt and black pepper (optional)

Instructions

  • Cut the corned beef into small pieces and add to the slow cooker.
  • Rinse the potatoes and add them to the slow cooker.
  • Cut the onions and carrots and add to the cooker.
  • Add the cornstarch to the beef broth and mix. Pour over the ingredients and top with salt, pepper, and ground mustar4d.
  • Cook on low heat for 10 hours.
