Pineapple Casserole Recipe

- 6 Tablespoons pineapple juice
- 40 ounces pineapple chunks about 6 cups
- 1/3 cup of sugar
- 5 Tablespoons all-purpose flour
- 1 cup of shredded sharp cheddar cheese
- 1 sleeve of Ritz Crackers crushed
- 1/4 cup of melted butter
Preheat the oven to 350 degrees. Grease an 8-inch by 8-inch baking dish.
Add the sugar, flour, and pineapple juice to a large bowl and mix well.
Next, add the pineapple chunks and toss to cover.
Pour the pineapple mixture into the baking dish.
Sprinkle the shredded cheese on top of the pineapple mixture.
Next, crush the Ritz Crackers and add them to a separate bowl.
Melt the butter, pour it over the crackers, and toss to coat.
Pour the crackers over the cheese and spread to the edges.
Bake for 30 minutes, uncovered.
When mixing the pineapple juice with the flour mixture it will get thick and that is ok.
The side dish is done when it's golden brown on top.
