Ingredients

  • ½ cup unsalted butter room temperature
  • ½ cup granulated sugar
  • ½ cup light brown sugar packed
  • cup creamy peanut butter room temperature
  • 2 teaspoon vanilla bean paste or vanilla extract
  • 2 large eggs room temperature
  • 2 cups all purpose flour leveled
  • 1 teaspoon kosher salt
  • 1 teaspoon baking soda
  • 1 cup old fashioned oats
  • ½ cup white chocolate chips
  • ½ cup mini semi sweet chocolate chips
  • 1 cup valentine M&M’s plus more for topping
  • pinch flaky sea salt optional garnish

Instructions

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • Grab the bowl of a stand mixer fitted with the paddle and cream together the butter and both sugars.
  • Next, add peanut butter and vanilla bean paste and mix until combined.
  • Add the eggs one at a time and mix until combined. Scrape down the bowl and mix again to ensure the eggs are evenly mixed into the batter.
  • Add the flour, salt, and baking soda to the bowl of the stand mixer and mix until just combined.
  • With the mixer on low speed, slowly add in the oats, white chocolate, mini chocolate chips, and M&M candies. Mix on low until the ingredients are all incorporated. You do not want to over-mix.
  • Scoop out dough using a two-tablespoon cookie scoop and place about 1-1/2 to 2 inches apart. Slightly flatten the cookie dough and place additional M&M’s and mini chocolate chips on top.
  • Bake cookies in your preheated oven for 11-13 minutes or until the edges are slightly brown.
  • Let cookies rest on the baking sheet for two minutes, and then transfer them to a cooling rack.
  • Optional: Sprinkle on some sea salt now if you'd like.

Notes

If you want to make your cookies perfectly round, use a drinking glass and place the mouth of the glass around the cookie, then gently swirl to round out your cookies.
