How to Make Jiffy Cake Mix Better (Moist, Tender, and Bakery-Style)

If you've got a box of Jiffy yellow cake mix and want it to taste like you made it from scratch, these are the hacks I use to make it shine.

Ingredients

  • 9 ounce Jiffy Golden Yellow Cake Mix
  • ½ cup buttermilk
  • 2 Tablespoons butter melted
  • ¼ cup mayonnaise
  • 2 eggs

Instructions

  • Preheat the oven to 350 degrees and line an 8-inch by 8-inch baking dish with butter, then parchment paper. (Parchment paper is not required, but it makes lifting the cake out easier).
  • Add the Jiffy cake mix to a medium-sized mixing bowl.
  • Next, add the buttermilk, melted butter, eggs, and mayonnaise, and mix for about two minutes with a hand mixer.
  • Pour the batter into the baking dish.
  • Bake for approximately 25 minutes or until a cake tester comes out clean. Make sure the center is not jiggly. If so, cook two more minutes at a time until set.
  • Allow the cake to cool before frosting.
