Halloween Caramel Popcorn Recipe

It's Halloween and there's nothing better than a homemade caramel popcorn munch recipe to eat at home or take to a party.

Ingredients

Popcron

  • 9 Tbsp. vegetable oil only if you are popping the popcorn at home
  • 30 cups of popped popcorn or 1-1/2 kernels to pop

Caramel

  • 1 cup butter or two sticks
  • 1/2 cup light corn syrup
  • 1-1/2 cups light brown sugar
  • 1 tsp. salt

Chocolate Topping

  • 12 oz. white chocolate chips

Toppings

  • 1 cup candy corn
  • 1 cup peanuts
  • 1 cup almonds
  • 1 cup pretzels
  • Sprinkles
  • Googly eyes

Instructions

  • Popcorn
  • If you are making the popcorn at home, add three tablespoons of vegetable oil to a large saucepan and add half a cup of kernels.
  • Turn the burner on medium to medium-high heat, place a lid on top, and pop the popcorn.
  • Repeat two more times to get 30 cups of popcorn.
  • Caramel
  • Add the butter to a saucepan on medium-high heat.
  • Pour the light corn syrup into the pan, along with the brown sugar and salt, and mix well.
  • Bring to a boil and allow it to boil for five minutes.
  • Pour the homemade caramel over the popcorn, while stirring the popcorn to coat.
  • Spread the caramel popcorn out on three cookie sheets.
  • Top with pretzels, peanuts, almonds, and candy corn.
  • Chocolate Topping
  • Melt the white chocolate chips in a small bowl in increments of 30 seconds until melted.
  • Take a spoon and drizzle the chocolate over the popcorn mixture.
  • Top with sprinkles over the white chocolate.
  • Refrigerate the popcorn or allow it to sit on the counter until the caramel and white chocolate harden.
  • Break apart and put into bowls or plastic bags.

Notes

This recipe will make 30 cups of popcorn. It will fill three and a half gallon size bags.
