Gluten-free peanut butter chocolate chip cookies are the perfect treat any time of year. They are easy to make and only require five ingredients.

- 1 cup of creamy peanut butter
- 1 cup of white sugar
- 1 egg
- 1/4 cup of whipped cream cheese
- 12 ounce bag of semi-sweet chocolate chips
Preheat the oven to 325 degrees.
Mix the peanut butter, cream cheese, egg, and sugar in a large mixing bowl with an electric mixer.
Add the chocolate chips and stir them in.
Scoop the cookies onto a baking sheet and press down a little. They don't spread much while baking.
Bake for approximately 20-25 minutes.
Note: you can use half the amount of chocolate chips if desired.
Tips:
- You can use either a stoneware pan or a metal baking sheet. Line with some parchment paper for easier clean-up.
- Don't over mix the ingredients. Just mix enough to combine them.
- Store the cookies in an airtight container and keep them in the refrigerator.
- You can use a spoon or a medium cookie scoop to scoop the cookies and put them onto the baking sheet.
