Gluten-Free Peanut Butter Chocolate Chip Cookies

Gluten-free peanut butter chocolate chip cookies are the perfect treat any time of year. They are easy to make and only require five ingredients.

Ingredients

  • 1 cup of creamy peanut butter
  • 1 cup of white sugar
  • 1 egg
  • 1/4 cup of whipped cream cheese
  • 12 ounce bag of semi-sweet chocolate chips

Instructions

  • Preheat the oven to 325 degrees.
  • Mix the peanut butter, cream cheese, egg, and sugar in a large mixing bowl with an electric mixer.
  • Add the chocolate chips and stir them in.
  • Scoop the cookies onto a baking sheet and press down a little. They don't spread much while baking.
  • Bake for approximately 20-25 minutes.
  • Note: you can use half the amount of chocolate chips if desired.

Notes

Tips:
  • You can use either a stoneware pan or a metal baking sheet. Line with some parchment paper for easier clean-up.
  • Don't over mix the ingredients. Just mix enough to combine them.
  • Store the cookies in an airtight container and keep them in the refrigerator.
  • You can use a spoon or a medium cookie scoop to scoop the cookies and put them onto the baking sheet.
