Ingredients

2cupsall-purpose flour
2cupssugar
3/4cupunsweetened cocoa
2teaspoonsbaking powder
1-1/2teaspoonsbaking soda
1teaspoonsalt
1/2cupvegetable oil
1cupbuttermilk
2eggs
1teaspoonvanilla extract
1cupboiling hot water
Frosting
1cupevaporated milk
1cupsugar
3egg yolks
1/2cupbutter
1-1/2cupsshredded sweet coconut
1-1/2teaspoonsvanilla extract
1cupchopped pecans
Instructions
Cake
Preheat oven to 350 degrees and grease two 8-inch pans. Line the bottom of the pans with parchment paper circles.
In a large mixing bowl, add the sugar, all-purpose flour, cocoa, baking soda, baking powder, and salt and whisk.
Next, add the vegetable oil, buttermilk, eggs, and vanilla extract to the dry ingredients and mix well.
Add the boiling hot water and mix well.
Pour batter into two cake pans and bake for 30 minutes or until a cake tester comes out clean.
Frosting
While the cake is cooling, add the butter, evaporated milk, sugar, egg yolks, and vanilla extract to a saucepan on medium heat and mix well.
Cook about 10 minutes until thick, stirring often.
Remove the pan from the heat and stir in the shredded coconut and chopped pecans.
Place one of the layers of cake on a cake stand and spread part of the frosting over the top.
Place the second layer on the top and spread the remainder of the frosting on top of the cake.
