Ingredients
15.25 ouncebox Funfetti cake mixPillsbury
1stick buttersoftened
2eggs
Sprinkles
1stick buttersoftened
2cupspowdered sugar
8ouncescream cheese
1teaspoonvanilla extract
1-2teaspoonsmilk
Instructions
Line a baking sheet with parchment paper and set aside. Preheat oven to 350 degrees.
Combine cake mix, butter, eggs and sprinkles in a medium mixing bowl using a hand or stand mixer.
Using a 1 inch cookie scoop, scoop dough and roll into balls with hands. Place on a lined baking sheet.
Bake for 10 minutes then remove and transfer cookies to a wire rack to cool.
In another bowl, add butter and beat with a hand mixer for at least two minutes.
Add powdered sugar, cream cheese, vanilla extract, and milk and mix on low speed for another 2-3 minutes until frosting has thickened.
Add frosting to a Ziploc (or piping) bag and cut a small corner of the bag.
Flip one cookie over and spread icing in a circular motion on the flat side facing up then top with another cookie. Press slightly to allow frosting to come to the edges.
Notes
Store the cookies in an airtight container. Any leftover cookies need to be refrigerated once the frosting has been added.
