Crock Pot Lemon Chicken

This Crock Pot lemon chicken dinner recipe is an easy, budget-friendly meal for a family of two or four. Just add the chicken breasts, broth, milk, lemon juice, garlic, and butter to a slow cooker and let it cook for a few hours. 
It's so easy to make and you'll most likely have leftovers. This will quickly become one of your favorite crockpot dinners.

Ingredients

  • 4 boneless chicken breasts
  • 1/2 cup chicken broth or water
  • 1/2 cup milk
  • 1/2 cup lemon juice
  • 1 tsp. minced garlic
  • 1 tsp. dried minced onion
  • 1/2 stick butter cubed (4 Tbsp.)
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. cornstarch
  • 1/2 cup water to mix with cornstarch

Instructions

  • Add the chicken to a greased Crock Pot.
  • Next, pour in the chicken broth, milk, and lemon juice.
  • Add the minced garlic, onion, salt, pepper, and cubed butter, and cover with a lid.
  • Cook on low for seven hours.
  • Remove lid and mix the cornstarch with the 1/2 cup of water. Pour over chicken. Shred the chicken and replace cover.
  • Cook for 30 more minutes. Serve over rice or mashed potatoes.
