Ingredients

  • 2 pounds stew meat or beef tips
  • ½ head cabbage cut into small ribbons
  • 32 ounces frozen cubed potatoes
  • 14.5 ounce can petite diced tomatoes not drained
  • 32 ounces beef broth
  • 1 ounce packet beefy onion soup mix

Instructions

  • Cut the cabbage into ribbons, about a finger-width wide, and add to the Crock Pot.
  • Next, add the beef tips, potatoes, tomatoes, beef broth, and beefy onion soup mix to the slow cooker. Stir to combine.
  • Cover and cook on low for 8 hours, until the beef is tender.
  • Tip: Don't be tempted to add more liquid. The cabbage, meat, and frozen potatoes will release liquid as they cook, and the cabbage will shrink significantly.
