Cheese Potato and Smoked Sausage Casserole

Ingredients

  • 3 Russett potatoes peeled, cut into cubes, boiled, and cooled. (I always get one extra potato in case you need it).
  • 1 pound of skinless smoked sausage
  • 4 tablespoons of butter + 1 tablespoon
  • 4 tablespoons of all-purpose flour
  • 2 cups of milk
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of ground black pepper
  • 2 cups of shredded sharp cheddar cheese

Instructions

  • Grease a 9x13-inch baking dish and preheat the oven to 350 degrees.
  • Cook the peeled and diced potatoes and add them to the greased baking dish.
  • Add one tablespoon of butter to a frying pan. Cut the sausage into small pieces and fry in a frying pan for about 20 minutes or so, or until the sausage is brown.
  • Next, add the cooked sausage to the baking dish. 
  • Add the four tablespoons of butter to a medium-sized saucepan and melt on medium heat.
  • Sprinkle the flour into the pan and whisk. It will be lumpy.
  • Pour the milk into the saucepan and whisk until the lumps are gone. Then, add the salt, pepper, and shredded cheese and cook until the cheese melts.
  • Next, pour the cheese sauce over the potatoes and sausage and bake uncovered for about 35 to 45 minutes or until the top is golden brown.

Notes

For this recipe, I used skinless smoked sausage Eckrich brand, which I bought at Publix.
Store any leftovers in an airtight container and keep them refrigerated.
